  • 1/2 tsp Saffron threads, bloomed in 2 tbsp warm water
  • 1/2 cup Heavy whipping cream

Cooking Instructions

1. Searing the Meat

Pat the veal shanks bone-dry with paper towels. Season aggressively with sea salt and cracked black pepper. Lightly dust only the meaty sides with almond flour. In a heavy-bottomed Dutch oven, heat the olive oil and 1 tbsp of butter over medium-high heat. Sear the shanks until a deep golden-brown crust forms (about 5 minutes per side). Remove and set aside.

2. The Aromatics and Deglazing

Lower the heat to medium. Add the remaining butter along with the celery and onion. Sauté until translucent but not browned. Add the smashed garlic and cook for 1 minute until fragrant.
