Ingredients
For the Vada (Potato Fritters):
- 6 medium-sized Potatoes, boiled, peeled and mashed
- 2-3 Green chilies, finely chopped (adjust to your spice preference)
- 1 inch Ginger, grated
- 1/2 tsp Turmeric powder
- 1 tsp Red chili powder (Kashmiri for color, optional)
- 1/2 tsp Coriander powder
- 1/4 tsp Asafoetida (hing)
- 1 tsp Salt, or to taste
- 1 tbsp chopped fresh Coriander leaves
For the Batter:
- 1 cup Gram flour (besan)
- 1/4 tsp Baking soda
- 1/2 tsp Salt
- Water, as needed to form a smooth batter
For the Pav (Buns):
- 6 Pav (Indian bread rolls), preferably the soft "ladi pav"
For the Chutneys:
- Garlic Chutney (Lahsun Chutney): Recipe follows below
- Green Chutney: (Cilantro-Mint Chutney): Recipe follows below
- Dry Garlic Chutney (Sukha Lahsun Chutney): (Optional, but highly recommended) Recipe follows below
For Frying:
- Vegetable oil, for deep frying
Instructions
1. Prepare the Potato Mixture:
- In a large bowl, combine the mashed potatoes, green chilies, ginger, turmeric powder, red chili powder, coriander powder, asafoetida, salt, and coriander leaves. Mix well until all ingredients are evenly distributed.
- Divide the mixture into 6 equal portions and shape each portion into a round or slightly flattened ball.
2. Make the Batter:
- In a separate bowl, whisk together the gram flour, baking soda, and salt.
- Gradually add water, a little at a time, whisking continuously to avoid lumps, until you achieve a smooth batter with a medium-thick consistency. It should be thick enough to coat the potato balls evenly. The batter should coat the back of a spoon.
3. Fry the Vadas:
- Heat vegetable oil in a deep frying pan or wok (kadai) over medium heat. The oil should be hot enough to fry the vadas properly, but not so hot that they burn quickly.
- Dip each potato ball into the gram flour batter, ensuring it is completely coated.
- Carefully drop the coated vadas into the hot oil, a few at a time, being careful not to overcrowd the pan.
- Fry the vadas until they are golden brown and crispy on all sides, about 3-4 minutes per batch.
- Remove the fried vadas with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
4. Prepare the Pav:
- Gently slice each pav horizontally, but do not cut all the way through. You want to create a pocket for the vada.
5. Assemble the Vada Pav:
- Spread a generous amount of garlic chutney on one side of the pav and green chutney on the other side.
- Place a hot, freshly fried vada inside the pav.
- If using, sprinkle some dry garlic chutney over the vada inside the pav.
- Serve immediately and enjoy!
