A decadent Umm Ali (Bread Pudding) crafted for perfection. This classic Middle Eastern dessert is a creamy, comforting treat made with layers of flaky pastry, nuts, and sweetened milk.
Ingredients
- 6-8 croissants or puff pastry sheets, roughly torn or cut into 1-inch pieces
- 1/2 cup mixed nuts (almonds, pistachios, walnuts), roughly chopped
- 1/4 cup raisins or golden raisins
- 4 cups whole milk
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1/4 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cardamom
- 2 tablespoons ghee or unsalted butter, melted
- Optional: Shredded coconut, extra nuts for garnish
Instructions
- Prepare the Bread: Preheat oven to 375°F (190°C). Spread the torn croissants or puff pastry pieces in a baking dish (approximately 9x13 inches).
- Add Nuts and Raisins: Sprinkle the chopped mixed nuts and raisins evenly over the bread.
- Make the Milk Mixture: In a saucepan, combine the milk, heavy cream, sugar, sweetened condensed milk, vanilla extract, and cardamom. Heat over medium heat, stirring until the sugar is dissolved. Do not boil.
- Pour the Milk Mixture: Pour the warm milk mixture evenly over the bread and nuts, ensuring all the bread is soaked. Gently press down on the bread to help it absorb the liquid.
- Drizzle with Ghee: Drizzle the melted ghee or butter over the top.
- Bake: Bake in the preheated oven for 30-40 minutes, or until the top is golden brown and the milk mixture has set.
- Cool and Garnish: Let the Umm Ali cool slightly before serving. Garnish with shredded coconut and extra nuts, if desired. Serve warm.
Chef's Secret
Always use room temperature ingredients for the best texture. For a richer flavor, toast the nuts lightly before adding them to the bread pudding. Adjust the sweetness to your preference by adding more or less sugar.
