A Golden Bite of Milanese Elegance
These Arancini represent the pinnacle of Italian party fare. We’ve elevated the humble Sicilian street food by incorporating the aromatic luxury of Milanese saffron and the earthy depth of Umbrian black truffles. Each sphere features a molten core of Taleggio cheese, providing a funky, creamy contrast to the crisp, golden exterior.
Ingredients
The Risotto Base
- 2 cups Arborio or Carnaroli rice
- 1 small shallot, finely minced
- 1/2 cup Dry Vermentino or Pinot Grigio
- 1 liter hot vegetable or light chicken stock
- 0.5 tsp high-quality Saffron threads (steeped in a little warm stock)
- 2 tbsp unsalted butter
- 1/2 cup freshly grated Parmigiano Reggiano
- 1 tbsp high-quality Black Truffle paste or minced preserved truffles
The Filling & Coating
- 150g Taleggio cheese, cut into 1/2-inch cubes
- 1 cup All-purpose flour
- 3 large eggs, beaten with a splash of water
- 2 cups Panko breadcrumbs (for extra crunch)
- 1 liter Rice bran oil or Grapeseed oil for frying
- Sea salt and cracked black pepper to taste
Cooking Instructions
- Prepare the Saffron Risotto: In a wide pan, sauté the shallot in a little butter until translucent. Add the rice and toast for 2 minutes until the edges are translucent. Deglaze with white wine. Gradually add the hot stock, one ladle at a time, stirring constantly until absorbed. Halfway through, add the saffron liquid.
- Finish and Chill: Once the rice is al dente and the liquid is absorbed, stir in the remaining butter and Parmigiano. Spread the risotto onto a large baking sheet to cool rapidly. Once at room temperature, fold in the black truffle paste. Refrigerate for at least 2 hours (this is crucial for shaping).
- The Assembly: Take a small handful of chilled risotto (about the size of a golf ball). Flatten it in your palm and place a cube of Taleggio in the center. Gently wrap the rice around the cheese to form a perfectly smooth sphere.
- The Breading Station: Set up three bowls: one with flour (seasoned with salt/pepper), one with the beaten eggs, and one with Panko. Dredge each ball in flour, dip in egg, and coat thoroughly in Panko.
- The Fry: Heat the oil to 170°C (340°F). Fry the arancini in batches for 3-4 minutes until they reach a deep golden brown. Drain on a wire rack or paper towels.
Serving Suggestions
To maintain the premium aesthetic, serve these on a slate board or a white ceramic platter.
- The Dip: Accompany with a side of roasted garlic and lemon aioli or a light pomodoro sauce infused with basil oil.
