Ingredients: The Heart of the Tamale

For the Pork Filling:

  • 3 pounds pork shoulder, cut into 2-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 dried guajillo chiles, stemmed and seeded
  • 2 dried ancho chiles, stemmed and seeded
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/4 teaspoon cloves
  • Salt and pepper to taste
  • Water or pork broth, as needed

For the Masa:

  • 8 cups masa harina (instant corn masa flour)
  • 6 cups warm pork broth (reserved from the pork filling, or store-bought)
  • 1 cup lard, softened (can substitute with vegetable shortening, but lard provides the best flavor)
  • 1 teaspoon baking powder
  • 1 teaspoon salt

Other:

  • Dried corn husks, soaked in warm water for at least 2 hours

Instructions: Crafting Authentic Flavor

  1. Prepare the Pork Filling: In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Sear pork cubes until browned on all sides. Remove pork from the pot and set aside.

  2. Add onion and garlic to the pot and cook until softened, about 5 minutes. Add guajillo chiles, ancho chiles, cumin, oregano, and cloves. Cook for 1 minute more, stirring constantly to release their aromas.

  3. Return pork to the pot. Add enough water or broth to cover the pork. Bring to a boil, then reduce heat and simmer for 2-2.5 hours, or until pork is very tender and easily shredded.

  4. Remove pork from the pot and shred with two forks. Reserve about 2 cups of the cooking liquid.

  5. Blend the remaining cooking liquid with the softened chiles until smooth (use an immersion blender or transfer carefully to a regular blender). Pour the blended sauce back into the pot with the shredded pork. Season with salt and pepper to taste. Simmer for 15 minutes to allow flavors to meld beautifully.

  6. Prepare the Masa: In a large bowl, combine masa harina, warm pork broth, softened lard, baking powder, and salt. Mix until a soft, slightly sticky dough forms. If the dough is too dry, add more broth, a tablespoon at a time. If it is too wet, add more masa harina, a tablespoon at a time. The consistency should be similar to that of soft cookie dough.

  7. Assemble the Tamales: Spread about 1/4 cup of masa onto the center of a softened corn husk, leaving a 1-inch border on all sides.

  8. Top with about 2 tablespoons of the flavorful pork filling.

  9. Fold the sides of the corn husk over the filling, then fold up the bottom. If necessary, tie the tamale with a strip of corn husk to secure it.

  10. Steam the Tamales: Place tamales upright in a steamer basket set over a pot of boiling water. Make sure the water level is below the steamer basket so the tamales are steamed and not boiled. Cover and steam for 1.5-2 hours, or until the masa is firm and pulls away from the corn husk easily.

  11. Rest and Serve: Let the tamales cool slightly before serving. This allows the masa to set and makes them easier to handle.
