Ingredients
- 1.5 kg whole chicken
- 2 liters water
- 3 tbsp vegetable oil
- 4 cloves garlic, minced
- 2 shallots, minced
- 2 cm ginger, bruised
- 2 cm galangal, bruised
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 3 kaffir lime leaves
- 1 lemongrass stalk, bruised
- Salt and pepper to taste
- 2 hard-boiled eggs, quartered
- 100g glass noodles, soaked in hot water
- 100g bean sprouts, blanched
- Fried shallots, for garnish
- Fresh scallions, chopped, for garnish
- Lime wedges, for serving
- Sambal (chili paste), for serving
Instructions
- Prepare the Chicken: Clean the chicken thoroughly. Place in a large pot with water and bring to a boil. Reduce heat and simmer for 45 minutes, or until chicken is cooked through. Remove chicken and set aside to cool.
- Shred the Chicken: Shred the chicken meat and set aside. Strain the broth and return it to the pot.
- Sauté the Aromatics: Heat oil in a pan over medium heat. Sauté garlic, shallots, ginger, and galangal until fragrant. This step is crucial for building the flavor base of the soup.
- Bloom the Spices: Add turmeric powder, coriander powder, and cumin powder to the pan. Cook for 1 minute more, allowing the spices to bloom and release their full aroma.
- Infuse the Broth: Pour the spice mixture into the chicken broth. Add kaffir lime leaves and lemongrass stalk.
- Simmer and Season: Bring the broth to a simmer and season with salt and pepper to taste. Allow the flavors to meld together for at least 15 minutes.
- Assemble the Soup: To assemble the Soto Ayam, place glass noodles, bean sprouts, and shredded chicken in a bowl.
- Ladle and Garnish: Pour hot broth over the ingredients. Garnish generously with hard-boiled eggs, fried shallots, and scallions.
Serving Suggestions
Serve the Soto Ayam hot with lime wedges and sambal on the side. The lime adds a refreshing tang, while the sambal provides a spicy kick. This soup is a complete meal in itself, but you can also serve it with steamed rice or krupuk (Indonesian crackers) for a more substantial meal. Enjoy this taste of Indonesia!
