Smoked Chipotle-Hibiscus Tacos with Agave-Glazed Shishito Peppers
Remix Recipe

Elevate your plant-based repertoire with this sophisticated interpretation of Mexican street soul. This recipe transforms the humble *Flor de Jamaica* (hibiscus flower) from a tea ingredient into a deeply savory, "meaty" taco filling. The natural acidity of the hibiscus is balanced by the smoky depth of chipotle and the cooling luxury of whipped goat cheese, creating a multi- dimensional flavor profile that challenges the boundaries of traditional vegetarian cuisine.

Elevate your plant-based repertoire with this sophisticated interpretation of Mexican street soul. This recipe transforms the humble Flor de Jamaica (hibiscus flower) from a tea ingredient into a deeply savory, "meaty" taco filling. Ingredients

The Hibiscus Base

  • 2 cups dried hibiscus flowers (Flor de Jamaica)
  • 2 tbsp chipotle in adobo sauce, finely minced
  • 1 large leek, white and light green parts only, julienned
  • 2 cloves garlic, microplaned
  • 1 tsp ground cumin
  • Extra virgin olive oil

The Cream & Peppers

  • 150g premium soft goat cheese (Chèvre)
  • 2 tbsp heavy cream or Mexican Crema
  • 12-15 fresh shishito peppers
  • 3 tbsp organic agave nectar
  • 1 lime, juiced
  • Smoked Maldon sea salt

To Serve

  • 8 small heirloom blue corn tortillas
  • 1 ripe Hass avocado, thinly sliced
  • Fresh micro-cilantro or radish sprouts
  • Toasted pepitas (pumpkin seeds) for crunch

Cooking Instructions

1. Prepare the Hibiscus "Meat"

Bring a medium pot of water to a boil. Add the dried hibiscus flowers and simmer for 10-12 minutes. Drain the flowers (you can save the deep red liquid for hibiscus tea/agua fresca). Rinse the flowers three times in cold water to remove excess acidity and squeeze them firmly to remove all moisture. Pat dry with a paper towel.

2. The Whipped Chèvre

In a small mixing bowl, combine the goat cheese, heavy cream, and a pinch of smoked sea salt. Use a whisk or a small food processor to blend until the mixture is light, airy, and spreadable. Transfer to a piping bag or small bowl and chill until needed.

3. Blister the Shishitos

Heat a cast-iron skillet over high heat with a teaspoon of oil. Toss in the shishito peppers. Let them sit undisturbed for 2 minutes until the skins blister and char. Lower the heat to medium, drizzle the agave nectar and half the lime juice over the peppers. Toss for 30 seconds until glazed and sticky. Remove from heat immediately.

4. Sauté the Filling

In a wide skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the julienned leeks and cook until softened (about 4 minutes). Stir in the garlic, cumin, and the prepared hibiscus flowers. Add the minced chipotle in adobo. Sauté for 8-10 minutes, stirring frequently, until the hibiscus edges become slightly caramelized and crispy. Season with salt to taste.

5. Assemble

Flash-warm the blue corn tortillas over an open flame or in a dry pan until pliable.

  • Spread a generous dollop of the whipped goat cheese across the center of each tortilla.
  • Pile the smoked chipotle-hibiscus mixture on top.
  • Place one or two agave-glazed shishito peppers on each taco.
  • Top with a slice of avocado, a sprinkle of toasted pepitas, and micro-cilantro.

Serving Suggestions

To complete this premium experience, serve these tacos alongside a chilled Chardonnay or a Hibiscus-infused Mezcal Negroni. The earthiness of the blue corn and the smokiness of the chipotle pair beautifully with charred corn esquites topped with nutritional yeast or cotija cheese. For an extra kick, provide a side of fermented habanero hot sauce.
