Shuku Shuku, also known as Coconut Balls, is a delightful West African treat made from shredded coconut, flour, and sugar. These sweet and chewy balls are a popular snack and dessert.
Ingredients
- 2 cups desiccated coconut
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 1/2 cup water
- 1/4 teaspoon ground nutmeg (optional)
- Vegetable oil, for frying
Instructions
- Prepare the Mixture: In a large bowl, combine the desiccated coconut, flour, sugar, and nutmeg (if using). Mix well to ensure the ingredients are evenly distributed.
- Add Water: Gradually add the water to the dry ingredients, mixing until a thick, slightly sticky dough forms. If the dough is too dry, add a little more water, one tablespoon at a time.
- Shape the Balls: Take small portions of the dough and roll them into small balls, about 1 inch in diameter.
- Fry the Balls: Heat vegetable oil in a deep frying pan over medium heat. Carefully drop the coconut balls into the hot oil, a few at a time, to avoid overcrowding the pan.
- Fry to Golden Brown: Fry the balls until they are golden brown and crispy on all sides, turning them occasionally. This should take about 3-5 minutes.
- Remove and Drain: Remove the fried coconut balls from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
- Cool and Serve: Allow the Shuku Shuku to cool slightly before serving. They can be enjoyed warm or at room temperature.
Chef's Secret
For an extra burst of flavor, add a touch of vanilla extract or a pinch of cinnamon to the coconut mixture. Ensure the oil is hot enough before frying to prevent the balls from absorbing too much oil.
