Ingredients

  • Bamboo skewers, soaked in water for 30 minutes

For the Peanut Sauce:

  • 1/2 cup peanut butter (smooth or crunchy)
  • 1/4 cup coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp brown sugar
  • 1 clove garlic, minced
  • 1/2 tsp chili garlic sauce (or to taste)
  • Water, to thin

Instructions

Preparing the Chicken Satay:

  1. In a large bowl, whisk together the soy sauce, lime juice, honey (or brown sugar), ginger, garlic, turmeric, coriander, cumin, and red pepper flakes (if using).
  2. Add the chicken cubes to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, or up to 4 hours for optimal flavor. Soaking the chicken for longer results in a more flavorful, tender bite.
  3. While the chicken marinates, prepare the peanut sauce (see recipe below).
  4. Preheat your grill to medium heat. Thread the marinated chicken onto the soaked bamboo skewers, leaving a small space between each piece to ensure even cooking.
  5. Lightly oil the grill grates. Grill the chicken skewers for 6-8 minutes per side, or until cooked through and lightly charred. Turn frequently to ensure even cooking and prevent burning.
  6. Remove the satay from the grill and let rest for a few minutes before serving.

Making the Peanut Sauce:

  1. In a medium saucepan, whisk together the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, garlic, and chili garlic sauce.
  2. Heat over medium-low heat, stirring constantly, until the sauce is smooth and heated through.
  3. If the sauce is too thick, add water, one tablespoon at a time, until it reaches your desired consistency.
  4. Taste and adjust seasonings as needed. You may want to add more lime juice for tanginess, brown sugar for sweetness, or chili garlic sauce for heat.
  5. Keep warm until ready to serve.
