Ingredients

For the Chaat:

  • 4 pre-made samosas (aloo samosas are traditional, but any kind will work)
  • 1 cup plain yogurt, whisked until smooth
  • 1/2 cup tamarind chutney (store-bought or homemade)
  • 1/2 cup mint-coriander chutney (store-bought or homemade)
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sev (thin, crispy chickpea noodles)
  • 1 teaspoon chaat masala
  • 1/4 teaspoon red chili powder (optional, for extra spice)
  • Salt to taste

Optional Homemade Samosa Filling (if making from scratch):

  • 2 medium potatoes, boiled, peeled, and mashed
  • 1/2 cup green peas (fresh or frozen)
  • 1 tablespoon vegetable oil
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon ginger paste
  • 1/2 teaspoon green chili paste (or finely chopped green chilies)
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon garam masala
  • Salt to taste

Samosa Pastry (if making from scratch): Use your favorite recipe.

Instructions

  1. Prepare the Samosas: If using frozen or store-bought samosas, bake or deep-fry them according to the package instructions until golden brown and crispy. If making samosas from scratch, prepare the filling by heating oil in a pan. Add cumin seeds and let them sizzle. Add ginger and green chili paste, and sauté for a minute. Add the mashed potatoes, peas, turmeric powder, coriander powder, garam masala, and salt. Mix well and cook for a few minutes. Let the filling cool completely before filling the samosa pastry and frying or baking them.

  2. Crush the Samosas: Gently crush each samosa with your hands or the back of a spoon, breaking them into bite-sized pieces. Don't pulverize them – you want some texture!

  3. Assemble the Chaat: Arrange the crushed samosa pieces on a serving plate or individual bowls.

  4. Add the Chutneys: Drizzle generously with tamarind chutney and mint-coriander chutney. Adjust the amount according to your preference for sweetness and spice.

  5. Top with Yogurt: Spoon the whisked yogurt over the samosas and chutneys.

  6. Garnish: Sprinkle with chopped red onion, fresh cilantro, and sev.

  7. Season: Dust with chaat masala and red chili powder (if using). Add salt to taste.

  8. Serve Immediately: For the best texture and flavor, serve the samosa chaat immediately after assembling. The samosas will start to soften as they sit in the sauces.
