- 2 Shallots, brunoise (finely minced)
- 3 tbsp Extra virgin olive oil
The Umami Component
- 15g Dried Porcini mushrooms (rehydrated and chopped)
- 300g Fresh wild mushrooms (Chanterelles, Maitake, or King Oyster), sliced
- 2 cloves Garlic, smashed
The Finish (Mantecatura)
- 40g Cultured vegan butter (cold)
- 1 tbsp White truffle oil (high quality)
- 30g Pine nuts, toasted and roughly chopped
- 1 tbsp Fresh flat-leaf parsley, chiffonade
- 1 tsp Lemon zest, microplaned
- Maldon sea salt and freshly cracked black pepper
Cooking Instructions
1. Prepare the Mushroom Essence
Place the dried porcini in 200ml of warm water for 20 minutes. Drain through a coffee filter to remove grit; reserve the liquid and add it to your main vegetable broth. Finely chop the rehydrated porcini.
2. Sauté the Mushrooms
In a wide pan, heat a splash of olive oil over high heat. Sear the fresh wild mushrooms until deep golden brown. Add the smashed garlic for the last minute of cooking, then season with salt and set aside.
3. The Tostatura (Toasting the Rice)
In a heavy-bottomed copper or stainless steel pan, sweat the shallots in olive oil over medium-low heat until translucent. Increase the heat to medium and add the rice. Stir continuously for 2-3 minutes until the grains are hot to the touch and the edges look translucent. This step is crucial for "locking" the grain.
4. Deglaze and Simmer
Pour in the white wine. Stir until the liquid has almost completely evaporated. Begin adding the simmering broth one ladle at a time. Wait for the rice to absorb the liquid before adding more.
5. Infuse Saffron and Porcini
Halfway through the cooking process (about 10 minutes in), stir in the chopped porcini and the saffron-infused broth. Continue adding the remaining broth. The rice should be al dente—firm to the bite but not crunchy—after approximately 18-20 minutes.
6. The Mantecatura
Remove the pan from the heat. This is the most important step for creaminess. Vigorously stir in the cold vegan butter. Cover the pan and let it rest for 2 minutes. This allows the starches to settle and creates the "all'onda" (wavy) texture.
