Description

A classic Indian sweet made from chenna (Indian cheese) and cooked in a light syrup. These spongy and juicy cheese balls are a delightful treat.

Ingredients

  • For the Chenna (Indian Cheese):

    • 1 liter whole milk
    • 2 tablespoons lemon juice or vinegar
  • For the Sugar Syrup:

    • 2 cups sugar
    • 4 cups water
    • 1/4 teaspoon cardamom powder
    • A few drops of rose water (optional)

Instructions

  1. Make the Chenna: Bring the milk to a boil in a heavy-bottomed pot. Reduce the heat and add the lemon juice or vinegar, stirring gently until the milk curdles. Separate the whey (watery part) from the chenna (solid part) using a muslin cloth or cheesecloth.
  2. Rinse the chenna under cold water to remove the lemon flavor. Squeeze out all the excess water. Hang the chenna in the muslin cloth for about 30 minutes to further drain any remaining water.
  3. Knead the chenna well with your palms until it becomes smooth and lump-free. This is crucial for soft rasgullas. Divide the chenna into small, equal-sized balls (about 1 inch in diameter).
  4. Prepare the Sugar Syrup: In a wide, deep pot or pressure cooker, combine the sugar and water. Bring the mixture to a rolling boil.
  5. Gently drop the chenna balls into the boiling syrup. Cover the pot or pressure cooker and cook for 15-20 minutes. If using a pressure cooker, cook for 1-2 whistles on medium heat. The rasgullas will double in size.
  6. After cooking, let the rasgullas cool in the syrup. Add cardamom powder and rose water (if using).
  7. Refrigerate for at least 2-3 hours before serving. The rasgullas will absorb the syrup and become even more flavorful.

Chef's Secret

Kneading the chenna well is key to achieving soft and spongy rasgullas. Don't overcook the rasgullas in the syrup, as they can become hard. Let them cool gradually in the syrup for the best texture.
