A decadent Pista Kulfi crafted for perfection, blending creamy textures with the rich flavor of pistachios.

Ingredients

  • 1 liter full-fat milk
  • 1/2 cup heavy cream
  • 1/2 cup sugar
  • 1 cup chopped pistachios
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons chopped almonds (for garnish)

Instructions

  1. Prepare the Milk Base: In a heavy-bottomed pan, combine the full-fat milk and heavy cream. Simmer over medium heat, stirring occasionally, until the mixture reduces to about half its original volume. This will take approximately 1-1.5 hours.
  2. Add Sweeteners and Flavorings: Stir in the sugar and cardamom powder. Continue simmering for another 5-10 minutes until the sugar is completely dissolved and the mixture thickens slightly. Be careful not to burn the milk.
  3. Incorporate Pistachios: Remove the pan from heat and stir in the chopped pistachios. Allow the mixture to cool completely.
  4. Set and Freeze: Pour the kulfi mixture into kulfi molds or small cups. Cover with foil or plastic wrap and insert a popsicle stick into each mold.
  5. Freeze: Freeze for at least 6-8 hours, or preferably overnight, until completely frozen.
  6. Unmold and Serve: To unmold the kulfi, dip the molds briefly in warm water. Gently pull out the kulfi and garnish with chopped almonds. Serve immediately.

Chef's Secret

Always use room temperature ingredients for the best texture. To prevent ice crystals, stir the mixture a few times during the first few hours of freezing.
