A refreshing and vibrant Mango Pomelo Sago, a popular dessert in Hong Kong and Southeast Asia. This delightful treat combines the sweetness of mango, the tang of pomelo, and the chewy texture of sago pearls in a creamy coconut milk base. Perfect for a light and flavorful dessert.
Ingredients
- 2 ripe mangoes, diced
- 1/2 pomelo, segmented
- 1/4 cup small sago pearls
- 1 can (13.5 oz) full-fat coconut milk
- 1/4 cup evaporated milk
- 2 tablespoons sugar (adjust to taste)
- 1/4 teaspoon vanilla extract
- Pinch of sea salt
Instructions
- Cook the Sago: Rinse sago pearls under cold water. Bring a pot of water to a boil, add sago, and cook until translucent (about 10-15 minutes). Drain and rinse under cold water to remove excess starch. Set aside.
- Prepare the Mango: Dice one mango into small pieces for the sago. Puree the other mango for the sauce.
- Make the Coconut Milk Base: In a bowl, combine coconut milk, evaporated milk, sugar, vanilla extract, and salt. Mix well until the sugar is dissolved.
- Assemble: In individual serving bowls or glasses, layer sago, diced mango, pomelo segments, and mango puree. Pour coconut milk mixture over the top.
- Chill: Refrigerate for at least 30 minutes to allow the flavors to meld.
Chef's Secret
For a richer flavor, use full-fat coconut milk and chill the mixture well before serving. Adding a squeeze of lime juice can brighten the flavors even more.
