Ingredients

  • 2 ripe mangoes, diced
  • 1/2 pomelo, segmented
  • 1/4 cup small sago pearls
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/4 cup evaporated milk
  • 2 tablespoons sugar (adjust to taste)
  • 1/4 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Cook the Sago: Rinse sago pearls under cold water. Bring a pot of water to a boil, add sago, and cook until translucent (about 10-15 minutes). Drain and rinse under cold water to remove excess starch. Set aside.
  2. Prepare the Mango: Dice one mango into small pieces for the sago. Puree the other mango for the sauce.
  3. Make the Coconut Milk Base: In a bowl, combine coconut milk, evaporated milk, sugar, vanilla extract, and salt. Mix well until the sugar is dissolved.
  4. Assemble: In individual serving bowls or glasses, layer sago, diced mango, pomelo segments, and mango puree. Pour coconut milk mixture over the top.
  5. Chill: Refrigerate for at least 30 minutes to allow the flavors to meld.
