Ingredients

Kataifi Dough Layer:
- 1 pound kataifi dough, thawed
- 1/2 cup unsalted butter, melted
- 2 tablespoons granulated sugar

Cheese Filling:
- 1 pound akkawi cheese, soaked and drained (or use a blend of mozzarella and ricotta)
- 1/4 cup heavy cream
- 1/4 cup granulated sugar
- 1 teaspoon orange blossom water (optional)

- 1 cup water
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon rose water (optional)
Instructions
- Prepare the Kataifi: Preheat oven to 350°F (175°C). In a large bowl, gently separate the kataifi dough. Pour the melted butter and sugar over the dough and mix well until evenly coated.
- Prepare the Cheese Filling: In a separate bowl, mix the akkawi cheese (or mozzarella and ricotta blend) with heavy cream, sugar, and orange blossom water (if using) until well combined.
- Assemble the Kunafa: Grease a 9-inch round baking dish. Press half of the kataifi mixture evenly into the bottom of the dish, creating a compact layer.
- Add the Cheese: Spread the cheese mixture evenly over the kataifi base.
- Top with Kataifi: Top with the remaining kataifi mixture, pressing down gently to create another compact layer.
- Bake: Bake for 30-40 minutes, or until golden brown and crispy.
- Prepare the Syrup: While the kunafa is baking, prepare the syrup by combining water, sugar, lemon juice, and rose water (if using) in a saucepan. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until slightly thickened. Let cool slightly.
- Pour the Syrup: Once the kunafa is out of the oven, immediately pour the warm syrup evenly over it.
- Garnish and Serve: Let the kunafa soak in the syrup for a few minutes. Garnish with chopped pistachios and serve warm.
Chef's Secret
Always soak and drain the akkawi cheese well to remove excess salt. This is crucial for balancing the flavors. If using mozzarella and ricotta, use full-fat versions for a richer taste. Adding a touch of orange blossom water to both the cheese filling and the syrup enhances the authentic Middle Eastern flavor.
