Ingredients

  • Dough:
    • 2 cups all-purpose flour
    • 1 tbsp baking powder
    • 1/2 tsp salt
    • 2 tbsp unsalted butter, cold and cubed
    • 1 large egg
    • 3/4 cup milk
  • Syrup:
    • 2 cups granulated sugar
    • 1 cup water
    • 1 cinnamon stick
    • 2-3 strips lemon peel
    • 1/4 cup lemon juice
    • 1 tsp vanilla extract
    • Pinch of salt
  • Vegetable oil, for deep-frying

Instructions

  1. Prepare the dough: In a large bowl, whisk together flour, baking powder, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Beat egg and milk together and gradually add to the dry ingredients. Mix until dough just comes together. Knead lightly for a few times. Wrap dough in plastic wrap and chill for at least 30 minutes.
  2. Prepare the syrup: In a saucepan, combine sugar, water, cinnamon stick, lemon peel, lemon juice, vanilla extract, and salt. Bring to a boil over medium heat, stirring until the sugar is dissolved. Reduce heat and simmer for 15-20 minutes, or until slightly thickened. Remove from heat and let cool completely. Remove cinnamon stick and lemon peel.
  3. Assemble and Fry: On a lightly floured surface, roll the chilled dough out to about 1/4-inch thickness. Cut into rectangles (approximately 2x4 inches). Make slits in each rectangle. Then weave the dough to form a koeksister shape. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  4. Soak: Fry the koeksisters in batches for 2-3 minutes per side, or until golden brown. Remove from oil and immediately submerge in the cold syrup. Let soak for 2-3 minutes, flipping halfway through.
  5. Serve: Remove koeksisters from syrup and place on a wire rack to drain. Serve immediately or store in the refrigerator.
