  • 1 cup milk (dairy or non-dairy)
  • 2 tablespoons black tea leaves (Kenyan tea preferred)
  • 1/2 inch ginger, grated
  • 3-4 cardamom pods, crushed
  • 3 cloves
  • 1 cinnamon stick
  • 1-2 tablespoons sugar or honey (adjust to taste)

Instructions

  1. In a saucepan, bring water to a boil.
  2. Add tea leaves, ginger, cardamom, cloves, and cinnamon stick. Simmer for 5-7 minutes to allow the flavors to infuse.
  3. Add milk and sugar/honey. Bring to a gentle simmer, being careful not to boil over.

  5. Strain the chai through a fine-mesh sieve into a serving glass.
