- Prepare the Dough: In a large bowl, combine the all-purpose flour, glutinous rice flour, instant yeast, granulated sugar, and salt.
- Knead the Dough: Add the warm water and vegetable oil to the dry ingredients. Knead the dough until it comes together into a smooth, slightly sticky ball. You can do this by hand or with a stand mixer.
- First Rise: Cover the bowl with plastic wrap or a clean kitchen towel and let it rise in a warm place for about 1 hour, or until doubled in size.
- Prepare the Filling: While the dough is rising, make the filling. In a small bowl, combine the brown sugar, cinnamon, and chopped nuts. Mix well.
- Divide the Dough: Once the dough has risen, gently deflate it. Divide the dough into 6-8 equal portions.
- Shape the Hotteok: Lightly grease your hands with vegetable oil. Take one portion of dough and flatten it into a circle, about 3-4 inches in diameter.
- Fill the Hotteok: Place a generous spoonful of the brown sugar filling in the center of the flattened dough.

- Cook the Hotteok: Heat a lightly oiled griddle or frying pan over medium heat.
