  • 1/2 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup chopped nuts (walnuts, pecans, or peanuts work well)

Instructions

  1. Prepare the Dough: In a large bowl, combine the all-purpose flour, glutinous rice flour, instant yeast, granulated sugar, and salt.
  2. Knead the Dough: Add the warm water and vegetable oil to the dry ingredients. Knead the dough until it comes together into a smooth, slightly sticky ball. You can do this by hand or with a stand mixer.
  3. First Rise: Cover the bowl with plastic wrap or a clean kitchen towel and let it rise in a warm place for about 1 hour, or until doubled in size.
  4. Prepare the Filling: While the dough is rising, make the filling. In a small bowl, combine the brown sugar, cinnamon, and chopped nuts. Mix well.
  5. Divide the Dough: Once the dough has risen, gently deflate it. Divide the dough into 6-8 equal portions.
  6. Shape the Hotteok: Lightly grease your hands with vegetable oil. Take one portion of dough and flatten it into a circle, about 3-4 inches in diameter.
  7. Fill the Hotteok: Place a generous spoonful of the brown sugar filling in the center of the flattened dough.
  8. Seal the Edges: Carefully pinch the edges of the dough together to completely seal the filling inside, forming a ball. Be sure to seal it tightly to prevent the filling from leaking out during cooking.
  9. Cook the Hotteok: Heat a lightly oiled griddle or frying pan over medium heat.
  10. Flatten and Cook: Place the filled dough balls onto the hot griddle, seam-side down. Use a spatula or a hotteok press to gently flatten the dough to about 1/2 inch thickness.
  11. Cook Until Golden: Cook for 2-3 minutes per side, or until the hotteok are golden brown and slightly crispy. The brown sugar filling will melt and caramelize during cooking.
  12. Serve Immediately: Remove the hotteok from the griddle and serve immediately. Be careful, as the filling will be very hot!
