Harira Soup: A Taste of Morocco

Harira is a traditional Moroccan soup, celebrated for its rich flavors and hearty ingredients. Ingredients

  • 1 tbsp olive oil
  • 1 lb lamb shoulder, cut into 1-inch cubes
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper (optional)
  • 1 (28 oz) can crushed tomatoes
  • 6 cups beef broth
  • 1 cup brown or green lentils, rinsed
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped parsley
  • 2 tbsp lemon juice
  • 1 tbsp all-purpose flour mixed with 2 tbsp water (for thickening)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the lamb cubes on all sides. Remove lamb and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and ginger and cook for 1 minute more.
  3. Stir in turmeric, cinnamon, and cayenne pepper (if using). Cook for 30 seconds, until fragrant.
  4. Return the lamb to the pot. Add crushed tomatoes and beef broth. Bring to a boil, then reduce heat and simmer for 1 hour, or until the lamb is tender.
  5. Add lentils and chickpeas to the pot. Continue to simmer for 30 minutes, or until the lentils are tender.
  6. Stir in cilantro, parsley, and lemon juice. Season with salt and pepper to taste.
  7. Gradually stir in the flour-water mixture to thicken the soup. Simmer for 5 minutes, until the soup reaches your desired consistency.
  8. Serve hot, garnished with fresh cilantro and a squeeze of lemon juice.
