- 1 tsp turmeric powder
- 1 tbsp coriander powder
- 1 tsp cumin powder

- 1/2 tsp red chili powder (adjust to taste)
- 1/2 tsp amchur powder (dry mango powder)
- 2 medium tomatoes, pureed
- Salt to taste
- Fresh coriander leaves for garnish
For the Bhature (Fried Bread)
- 2 cups all-purpose flour (maida)
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 tbsp yogurt
- 1 tbsp oil
- Salt to taste
- Water to knead
- Oil for deep frying
Instructions
Making the Chole
- Prepare the Chickpeas: Drain and rinse the soaked chickpeas. Pressure cook them with 4 cups of water, 1 tsp salt, and a pinch of baking soda until tender (about 4-5 whistles). Let the pressure release naturally.
- Temper the Spices: Heat oil in a pan. Add cumin seeds, cinnamon stick, green cardamom pods, black cardamom pod, and bay leaf. Sauté for a few seconds until fragrant.
- Sauté the Aromatics: Add chopped onion and sauté until golden brown. Add ginger-garlic paste and green chilies. Sauté for another minute.
- Spice it Up: Add turmeric powder, coriander powder, cumin powder, garam masala, red chili powder, and amchur powder. Sauté for a minute, adding a splash of water if needed to prevent burning.
- Tomato Base: Add tomato puree and salt. Cook until the oil separates from the masala.
- Simmer and Thicken: Add the cooked chickpeas along with some of the chickpea cooking liquid. Simmer for 15-20 minutes, allowing the flavors to meld. Mash some of the chickpeas for a thicker consistency.
- Garnish: Garnish with fresh coriander leaves.
Making the Bhature
- Prepare the Dough: In a bowl, mix all-purpose flour, baking powder, baking soda, yogurt, oil, and salt.
- Knead the Dough: Gradually add water and knead into a soft, smooth dough. Cover and let it rest for at least 2 hours.
- Shape the Bhature: Divide the dough into small, equal-sized balls.
- Roll it Out: Roll each ball into an oval or circular shape (about 5-6 inches in diameter).
- Fry to Perfection: Heat oil in a deep frying pan or wok on medium-high heat.
- Puff it Up: Gently slide the rolled bhatura into the hot oil. Press lightly with a slotted spoon to help it puff up.
- Golden Brown: Fry until golden brown on both sides.
- Drain and Serve: Remove and drain on paper towels.
Serving Suggestions
Serve hot chole with freshly fried bhature. Traditionally, it's accompanied by sliced onions, pickled carrots, and a wedge of lemon. A side of raita (yogurt dip) can also provide a cooling contrast to the spicy chole. Enjoy the authentic taste of India!
