A refreshing Chicha Morada perfectly balanced for flavor and sweetness. A traditional Peruvian drink made from purple corn, fruits, and spices, offering a unique and flavorful experience.
Ingredients
- 1 pound purple corn cobs, kernels removed
- 2 liters water
- 1 green apple, cored and chopped
- 1 pear, cored and chopped
- 1/2 pineapple, peeled and chopped
- 1 cinnamon stick
- 5 cloves
- Juice of 1 lime
- 1/2 cup sugar (adjust to taste)
Instructions
- In a large pot, combine the purple corn, water, apple, pear, pineapple, cinnamon stick, and cloves.
- Bring to a boil, then reduce heat and simmer for about 45-60 minutes, or until the corn has released its color and the liquid has a deep purple hue.
- Strain the mixture through a fine-mesh sieve or cheesecloth into a pitcher, discarding the solids.
- Stir in the lime juice and sugar until dissolved. Adjust sweetness as needed.
- Chill in the refrigerator for at least 2 hours before serving.
Pro Tip
Serve chilled in a frosted glass with a slice of apple or pineapple for garnish. Add a few ice cubes just before serving to keep it extra cold.
