Ingredients

  • 1 pound purple corn cobs, kernels removed
  • 2 liters water
  • 1 green apple, cored and chopped
  • 1 pear, cored and chopped
  • 1/2 pineapple, peeled and chopped
  • 1 cinnamon stick
  • 5 cloves
  • Juice of 1 lime
  • 1/2 cup sugar (adjust to taste)

Instructions

  1. In a large pot, combine the purple corn, water, apple, pear, pineapple, cinnamon stick, and cloves.
  2. Bring to a boil, then reduce heat and simmer for about 45-60 minutes, or until the corn has released its color and the liquid has a deep purple hue.
  3. Strain the mixture through a fine-mesh sieve or cheesecloth into a pitcher, discarding the solids.
  4. Stir in the lime juice and sugar until dissolved. Adjust sweetness as needed.
  5. Chill in the refrigerator for at least 2 hours before serving.

Pro Tip

Serve chilled in a frosted glass with a slice of apple or pineapple for garnish. Add a few ice cubes just before serving to keep it extra cold.
