Ingredients
- 2 tablespoons vegetable oil

- 2 carrots, grated
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can baked beans, undrained
- 1 tablespoon curry powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili flakes (or more, to taste)
- Salt and black pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant.
- Add the green and red bell peppers and carrots to the pot. Cook for 5-7 minutes, until slightly softened.
- Stir in the diced tomatoes, baked beans, curry powder, smoked paprika, and chili flakes. Season with salt and pepper to taste.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to an hour, stirring occasionally, until the vegetables are tender and the flavors have melded. The longer it simmers, the better the flavors combine!
- Taste and adjust seasoning as needed. Garnish with fresh cilantro before serving.
