- 1 tsp ground coriander
- 1/2 tsp ground cumin
- 1/4 tsp ground cloves
- 2 tbsp apricot jam
- 2 tbsp chutney (Mrs. Balls Chutney is traditional)
- 2 tbsp lemon juice
- 1 tbsp Worcestershire sauce
- 1/4 cup raisins or sultanas (optional)
- 2 bay leaves
- 2 large eggs
- 1/2 cup milk
- Salt and freshly ground black pepper, to taste
- Vegetable oil, for cooking
Instructions
- Preparation is Key: Preheat your oven to 180°C (350°F). Grease a large baking dish (approximately 9x13 inches).
- Sauté the Aromatics: Heat a tablespoon of vegetable oil in a large pan or skillet over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant. Be careful not to burn the garlic.
- Brown the Beef: Add the ground beef to the pan and cook, breaking it up with a spoon, until browned all over. Drain off any excess fat.
- Soaked Bread Magic: Squeeze the excess milk from the soaked bread slices. Crumble the bread into the beef mixture. This helps bind the mixture and adds a lovely texture.
- Spice it Up: Stir in the curry powder, turmeric, coriander, cumin, cloves, apricot jam, chutney, lemon juice, Worcestershire sauce, and raisins (if using). Season generously with salt and freshly ground black pepper. Mix everything thoroughly to ensure the spices are evenly distributed.
- Simmer for Flavor: Reduce the heat to low, cover the pan, and simmer for 15 minutes, stirring occasionally. This allows the flavors to meld together beautifully.
- Transfer and Top: Pour the beef mixture into the prepared baking dish. Spread it evenly.
- Custard Creation: In a separate bowl, whisk together the eggs and milk. Season with a pinch of salt and pepper.
- Custard Layer: Pour the egg mixture evenly over the beef mixture in the baking dish.
- Bay Leaf Infusion: Place the bay leaves on top of the custard. This adds a subtle, aromatic flavor.
- Bake to Perfection: Bake in the preheated oven for 30-45 minutes, or until the custard is set and golden brown. A knife inserted into the center should come out clean.
- Rest and Serve: Remove from the oven and let the bobotie rest for 10 minutes before serving. This allows the custard to firm up a bit.
